Salads are great, but can get boring. Try these four lettuce free salad recipes!

Simple and easy lunches are always the best. That’s one of the many reasons salads are popular! Of course, there’s the health aspect that is another draw, but have you ever tried lettuceless salads?

Tasty has held up to their namesake and given us four deliciously tasty salad recipes that cut out lettuce!

Heirloom Tomato Salad
Ingredients

  • 3 medium heirloom tomatoes
  • 2 tablespoons  olive oil
  • 2 teaspoons  balsamic vinegar
  • 3 tablespoons  feta cheese, crumbled
  • 1 tablespoon  fresh parsley, chopped

Getting Started

  1. Using a serrated knife, slice the tomatoes into ½-inch (1 cm) thick rounds.
  2. Arrange the sliced tomatoes on a plate, alternating colors if desired.
  3. Drizzle with the olive oil and balsamic vinegar, and sprinkle the feta and parsley on top.

Melon Salad
Ingredients

  • ½ small seedless watermelon
  • ½ small cantaloupe
  • salt, to taste
  • ½ cup  greek yogurt
  • 2 tablespoons  olive oil
  • 1 tablespoon  water
  • 2 tablespoons  lemon juice
  • fresh mint leaf, for serving

Getting Started

  1. Using a melon baller or a teaspoon, scoop out rounds of watermelon and cantaloupe and place in a large bowl. Season with a pinch of salt.
  2. In a liquid measuring cup or small bowl, combine the Greek yogurt, olive oil, water, and lemon juice. Stir until smooth.
  3. Serve the melon in bowls and top with the dressing and fresh mint leaves.
