Nicko’s Kitchen put together a step by step video guide for completing this amazing recipe for fast food style french-fries. The ingredients you’ll need are potatoes (longer is better), water, sugar, corn syrup, canola oil, and salt.

To start, you should wash and dry your potatoes. Then, using a vegetable peeler, peel off the potato skin. The next step, you have a few options with. You can use a knife to cut your potatoes (although, this may take longer and not give you the correct shapes) or use a more specialized cutting tool. In the video, a V slicer gives the potatoes the perfect shape or recreating fast food fries.

Place your potato slices in a dish of cold water and let them soak for about five minutes. This allows the excess starch to be removed from the potatoes. While your potatoes are soaking in the cold water, take another dish and add hot water, sugar and corn syrup. Stir until the sugar has dissolved and the corn syrup is incorporated into the water. Transfer the fries from the cold water to the hot and let soak for 10 minutes. This second water bath is what will give your fries a sweet crispy texture once cooked.

Remove your strips and dry off any excess moisture; then freeze for 20 minutes. Using canola oil, fry your strips for 2-3 minutes and remove to a plate. Let stand for 10 minutes and then return to the fryer for -7 more minutes. Once your fries have that beautiful golden color, they’re ready to be removed. Season with salt while they’re still hot.
