Green eggs and not ham, oh my! You have to try this vegetarian alternative!

Dr. Seuss is a tried-and-true kid favorite for many generations. One of the most popular books is Green Eggs and Ham. In honor of St. Patrick’s Day, Justine has put a new twist on this iconic duo.

Most of the supplies can be found already in your pantry. Pancake mix, water, eggs, and green food coloring. Since no meat is used in the making of this dish, this is a great vegetarian alternative to the classic green eggs and ham! With the whole meal going from start to plate in just about 15 minutes, this meal is great or those busy mornings getting the kids ready for school.

Start by following the directions for making the pancakes and use a greased griddle or frying pan. Don’t get discouraged if your first few pancakes don’t turn out looking the greatest. They’ll still taste just as wonderful.

Next you want to separate your egg whites from the yolks. Make sure to save the yolks for later. Add green food coloring to the egg whites and bat together. Fry the green egg whites on a preheated surface. Next you want to add the egg yolk to the top of the whites and cover with a sauce pan. This helps cook the egg yolk from the top.
